I use emacs with org mode, and the orgzly android app, for my note taking. It fits my needs well enough, though the android app cant do all the fancy latex insertion emacs can.

I have some small moleskins that are fancy and slowly filling with my jumbled thoughts. I try to keep it to specific topics per notebook, which helps me to not get frozen when writing in them. They are, ultimately, just paper, and if theres a string or collection of thoughts or writings that i want to have as a collective unit i rewrite them (with actual readable handwriting) into another notebook.
Cryptpad.fr offers spreadsheets and up to 1gb free storage, and if i recall right theyre using foss. Im unsure about the dashboard youve mentioned, but id hazard a guess that you can perform automatic calculations based upon cells in the spreadsheet, to for example sum all expenses.
